Where Fusel Alcohols Come From

The decision to stop collecting at the end of a run gets discussed far less than the decision to dump the foreshots. Yet when a finished spirit drags at the back of the palate, the culprit usually lives at this end. Start with what actually comes over late.

What gathers at the end

The tails at the end of a distillation run concentrate heavier fusel alcohols and oily, astringent compounds.1

If the foreshots are the fraction of the lightest compounds, the tails are the mirror image. High boiling points keep the heavy compounds behind until the run winds down, and only then do they cross over. Their flagship is the fusel alcohol family, and that family was born nowhere near the still.

Fermentation made them, distillation just sorts them

Higher alcohols, called fusel alcohols, form during fermentation from yeast amino-acid metabolism and taste harsh and solvent-like.2

Yeast handles amino acids alongside sugars, and these are the byproducts. A fermented wash already carries its fusel alcohols before the still is ever lit. Distillation creates none of them and merely herds them into the late fraction, which makes tails management an extension of fermentation management as much as a job at the still.

In the glass, they read as a gripping finish

The rough, drying character of young pot-distilled rice spirits is commonly attributed to fusel alcohols and congeners carried over in distillation.3

A freshly distilled rice soju grips the throat because these compounds are still sitting there untouched. The wider the tails collection, the deeper that impression runs. A tightly cut spirit finishes clean even when it is young.

Lower the pressure and they rise

The fusel load does not hang on the cut alone. There is measured data showing that the operating pressure of the still moves the quantity itself.

In vacuum distillation of a rice-based distilled spirit, branched-chain fusel alcohols such as isobutanol and isoamyl alcohol are negatively correlated with distillation pressure, so they rise as the pressure is lowered, and pushing the pressure very low, to about 0.2 to 0.4 atm, tends to accentuate solvent-like off-notes.4

This cuts against the folk assumption that vacuum distilling always yields a gentler spirit. Drag the pressure too low and the branched-chain fusels climb until solvent notes poke through. Managing the tails turns out to be a two-variable problem where the cut point and the pressure setting move together.

At the table, the finish is your gauge. The oily, tightening sensation left after the swallow is the fingerprint of the tails, and its intensity reports how that house handled both variables.
