Where Free Glutamate Lives
Line up the ingredients everyone calls savory and a surprisingly compact map appears: one peak in the sea, one in the garden, two in the aging room, one in the fermentation vat. Before drawing it, it is worth being precise about what the map actually tracks.
The axis of the map
Free glutamate is the primary source of umami, the savory basic taste.1
The load-bearing word is free. Glutamate bound up in protein chains never reaches the tongue as taste. Only the molecules released from those chains register. So this is a map of foods where glutamate has been set loose, and it does not overlap with a map of high-protein foods.
The sea coordinate
Kombu kelp carries an exceptionally high concentration of free glutamate, on the order of 1,200 to 3,400 milligrams per 100 grams, which is why it serves as the principal glutamate source in dashi.2

The garden coordinate
Ripe tomatoes are a significant plant source of free glutamate.3

The aging-room coordinates
In the aging room, time does the releasing. Enzymes chip away at proteins over months and years, and glutamate that was locked in chains piles up in free form.
Parmigiano-Reggiano is among the cheeses highest in free glutamate.4
Long-aged cured hams accumulate free glutamate, giving them a deep savory taste.5
The crunchy specks in an old cheese and the white dots on a slice of cured ham are both residue of that accumulation. Half of what you pay for in aged foods is this slow chemistry.
The fermentation-vat coordinate
Fish sauce is rich in free glutamate produced as enzymes break down anchovy protein during long salted fermentation.6
The aging-room principle again, run faster and harder by fermentation. Protein breakdown equals glutamate release, and the same equation covers soy sauce, miso, and fermented seafood pastes, which makes the whole fermented-condiment shelf a continent on this map.
With the map in hand, a dish that lacks savoriness tells you which direction to reach. For broths the sea is closest, for sauces the garden, for finishing touches the aging room.
- When a broth lacks depth, test a piece of kombu first. It starts you at the highest peak on the map.
- In meatless sauces and stews, fill the plant axis with ripe tomatoes or tomato paste.
- Simmer a Parmigiano rind into a pasta sauce or soup. It builds a different layer than grating on top.
- Try seasoning a stir-fry with a few drops of fish sauce in place of salt and compare the difference.
- On days when cured ham or aged cheese is on the plate, ease off other savory ingredients. Stacked coordinates read as too much.
