How Long Can Cooked Food Sit Out? The Two-Hour Line

You clear the table, do the dishes, and only then notice the pot still sitting on the counter where you left it. The baseline is two hours. If cooked food has been sitting at room temperature longer than that, throwing it out is the safer call, however wasteful it feels, and that line is not arbitrary; it comes from how fast bacteria multiply once food drops out of the refrigerator and off the stove. That is true of a holiday spread left out for grazing just as much as it is of a single forgotten pot of soup.

Why two hours is the line

Room temperature sounds like a state in which nothing much is happening, and for perishable food that is not remotely the case.

Perishable foods held between 4 and 60 degrees Celsius sit in the danger zone where bacteria multiply rapidly. The 4 to 60 degrees Celsius bounds are the USDA convention, and other authorities draw the band differently, such as the FDA Food Code range of 5 to 57 degrees Celsius.1

Two hours is how long food can realistically sit inside that range before the bacterial load has likely grown enough to matter. The number is a threshold, though, not a guarantee that food is fine right up until the two-hour mark and suddenly dangerous a minute later.

Perishable food left at room temperature for more than two hours should be discarded for safety. This two hour limit is USDA guidance for the United States, and the same guidance shortens it to one hour when the surrounding temperature is above 32 degrees Celsius.2

There is one part of this that people miss. The clock starts the moment food leaves the heat or the fridge, not when someone notices it has been sitting out. Food set out at the start of a three-hour party has been in the window the whole time, not just for the last hour anyone was watching it.

What the fridge does, and doesn't, undo

Does putting it back in the fridge reset that clock to zero?

Refrigeration at or below 4 degrees Celsius slows but does not stop the growth of most spoilage and pathogenic bacteria. The 4 degrees Celsius figure is the refrigeration target in United States guidance, or 40 degrees Fahrenheit, while other jurisdictions set it at 5 degrees Celsius or below.3

Refrigeration slows the growth that already happened during those two hours; it does not reverse it. That is why food that sat out too long stays a discard even after it goes back in the fridge.
