How to Reduce Astringency, and Why Sugar Beats Water

One sip of over-steeped tea and the inside of your mouth goes as dry as sandpaper. Most people rinse it away with water and wait it out, but there is a more reliable set of levers, and how to reduce astringency turns out to be less about removing anything than about changing how the mouth reads what is already in the glass.

What astringency actually is

Bitterness and sourness register on dedicated taste receptors the way salt and sugar do, but astringency arrives on a different channel entirely and is felt as friction rather than tasted as flavor. So what is actually going on in there?

Astringency is a dry, puckering tactile sensation caused by tannins binding and precipitating salivary proteins.1

The culprit is tannins, a broad family of plant compounds that turn up wherever plants and wood have touched a drink. Tea leaves carry them, grape skins and seeds carry them, and in spirits the most common source is the barrel itself.

Oak barrels contribute tannins that can add astringency and structure to aged spirits.2

Those same tannins give an aged spirit its backbone, so the goal is rarely to strip them out but to keep the structure while softening the drying edge on the tongue.

The levers that soften it

Because astringency is a sensation rather than a flavor to be neutralized, the most reliable tools work on perception rather than on the glass. The first one is unexpectedly ordinary.

Sweetness reduces the perceived intensity of astringency and bitterness on the palate.3

Sweetness is not the only lever, though, and a mixed drink with several things in it gives you a fuller toolkit to draw on.

Astringency in a spirit can be softened in a cocktail by adding sweetness, fat, or dilution.4

Note that this is masking, not removal. A clarification technique that physically strips tannins is a different approach altogether, whereas here the tannins stay in the glass and only the mouth reads them as gentler.
