Why Does Mozzarella Stretch? What Makes a Cheese Pull Happen

You lift a slice of pizza and the cheese comes with it, a long glossy thread that stretches to a hand's width before it finally thins out and snaps. It is the shot every food video slows down to catch. Meanwhile a shard of aged cheddar under the same heat just slumps into a greasy little puddle and does nothing at all. Same milk, same oven, completely different behavior. So what is going on?

Proteins, combed into strands

Mozzarella is not simply a soft, fresh cheese that happens to melt nicely. It gets made by a technique closer to a workout than to stirring, and that technique leaves its mark on the cheese long before anyone puts it on a pizza.

Fresh mozzarella is made by stretching curd in hot water, aligning the proteins into elastic strands.1

So the strands were pulled into place by hand, in hot water, before the cheese ever reached a shelf. The thing being combed into those strands is casein, the main protein of milk, and its story starts earlier still, back in the milk itself, before anyone thinks about curd or heat.

Casein proteins in milk are organized into micelles held together by calcium phosphate.2

Stretchy strands are not the whole story, though. You can feel it the moment cheese hits a hot pan: one turns into a smooth, flowing sheet, another just sweats and seizes into a rubbery knot. Why would two cheeses behave so differently at the same temperature?

A cheese's meltability depends on its moisture, fat, pH, and the calcium content of its casein network.3

Four things at once, then, and mozzarella happens to land in the sweet spot on all of them while carrying those aligned strands as well. A hard, aged cheese has dried out and shifted the balance, so it browns and separates instead of stretching. Nothing you do at the oven puts that back.

How to get the pull

Which means the shopping matters more than any trick at the stove. Half of this is settled before the oven is even on. Pick a good melter, treat it gently, and the pull mostly takes care of itself.
