Why Does Hollandaise Break? The Temperature Nobody Warns You About

One minute the hollandaise is pale gold and glossy, thick enough to coat the whisk. You look away to grab the lemon, and it has gone slick and grainy with butter weeping out at the edges. So what happened in those ten seconds? Almost always it is a temperature story, and the number that splits the sauce is lower than most people would guess. Hollandaise is not butter with lemon stirred into it. It is an emulsion the egg yolks are holding together by hand, and they let go the moment things get too warm.

What is actually holding it together

Fat and water do not want to mix, and left alone they never will. Something has to get in between the two and keep them there. So what is doing that job in a bowl of hollandaise?

Emulsifiers like lecithin and egg yolk stabilize emulsions by coating droplets and lowering interfacial tension.1

Lowering interfacial tension sounds like a lab term, but the job is simple enough. Every drop of butter gets a thin coat, and coated drops cannot find each other and merge back into a puddle. In hollandaise the yolks are the ones handing out those coats, and they keep at it the whole time the sauce sits in the bowl.

In hollandaise, lecithin in the egg yolks emulsifies warm butter with a little water, lemon juice, or vinegar, coating the individual fat droplets and holding them suspended in the liquid.2

That is a lot of work for two or three spoonfuls of yolk, and the yolks can only manage it across a narrow window of heat. Push past that window and the sauce comes apart, in two completely different ways.

Two ways heat ruins it

The first one has nothing to do with the eggs at all. Butter on its own has a ceiling it cannot be pushed past.

A butter emulsion breaks when overheated, as the milk fat coalesces and separates from the water phase.3

The second one is what catches most cooks, because it happens well before anything looks hot enough to worry about. Egg protein starts setting at a temperature you would walk right past.

Hollandaise breaks and turns grainy if heated above about 150 degrees Fahrenheit (65 degrees Celsius), because the egg yolks cook and coagulate, losing their ability to hold the butterfat in emulsion.4

That is a low bar compared to most sauces, which is why hollandaise wants the gentlest heat you can give it. Which raises the question nobody asks until the middle of a brunch service: how long can a finished batch just sit there?

Warm hollandaise sits within the bacterial danger zone, so it is held for only a limited time, roughly 1.5 to 2 hours, rather than kept warm indefinitely. The 1.5 to 2 hour window follows the two hour limit that United States food safety guidance sets for food held in that band.5

How to hold it, and how to rescue it

None of this makes hollandaise hard. It makes it specific. Keep the heat low, add the butter slowly, and know what to do in the couple of seconds when it starts to slip away from you.
