Why Does Honey Crystallize, and Is It Still Good?

A jar of honey that poured clear in spring comes out of the cupboard in winter gone cloudy, with grains catching on the spoon. The first thought is usually that it has gone bad, and happily that guess is wrong. So what went on inside the jar?

A syrup holding more sugar than it can

Honey looks like nothing more than a thick liquid. Chemically it is a crowded one, carrying far more sugar in a single jar than water would normally keep dissolved.

Honey is a supersaturated sugar solution and crystallizes over time as glucose separates out.1

The word doing the real work here is supersaturated. It names a specific, slightly unstable place that any concentrated sugar syrup can sit in.

A supersaturated sugar syrup holds more dissolved sugar than is stable at that temperature and crystallizes readily.2

So crystallization is not a defect creeping in from somewhere; it is the syrup drifting quietly back to the stable place it was always leaning away from. What a candy maker spends a whole recipe trying to prevent, honey gets around to on its own, in its own time.

The same physics as candy

That same readiness is what you are managing the whole way through a batch of candy. Start it in the wrong place and it spreads past stopping.

Stray crystals or agitation can seed unwanted crystallization in candy syrups.3

One stray crystal or a stir at the wrong moment can seize up a whole pan, which is why candy recipes make such a point of clean pots and still pans. There is also a way to head it off with chemistry rather than technique.

Heating sugar with acid or adding enzymes splits sucrose into invert sugar, which resists crystallization.4

A splash of lemon juice or a spoon of invert syrup keeps caramels and glazes smooth because it breaks sucrose into forms that do not line up into crystals so readily. Honey has no such brake. Given enough time, most jars turn grainy on their own.
